Pour all the seasonings into the bowl, crumble the sheets of laurel, squeeze the garlic cloves through the press. Pour the components with spice in French, season the composition with vegetable oil and salt, mix the mixture thoroughly.
  2. We release the brisket from the films, wash under running water, get wet well with paper towels. Lubricate the product with the resulting marinade, keep in the refrigerator for at least 6 hours.
  3. We wrap a piece of meat in a double layer of foil, fill it with the rest of the sauce, send it for an hour and a half to the oven (180 ° C). For uniform heat treatment, we always use the average heating temperature. At the end of cooking, open the paper, fry a piece until golden brown.

  1. My beef brisket, dried with paper napkins, “arm” with a sharp knife, make a deep cut in the meat (not to the base of the piece) in the form of a “pocket”. Sew it on both sides, leaving a small hole for free entry of a tablespoon.
  2. We pass the peeled and finely chopped onion in oil until it becomes soft. Soak bread in milk. We chop hard-boiled eggs in the form of cubes.
  3. We spread in minced meat pieces of transparent onion, semolina, pressed bread, raw yolks, chopped eggs, fenugreek, grated nut, ginger.
  4. Beat slightly salted proteins, attach together with chopped herbs to other products, mix everything thoroughly.
  5. We stuff the beef with the resulting composition, the hole must be sewn up. We place the decorated meat on a baking sheet covered with foil, sprinkle the product with pepper and thyme, cover with bacon, sliced ​​into thin slices. We tightly connect the ends of the paper, send the workpiece for 7 hours to the oven (120 ° C). To get the most tender, melting brisket in the mouth, we use the baking method at low temperature.

An original way to prepare a delicious brisket. At the same time, onion peel acts as a magnificent natural dye.

Product List:

  • laurel sheets - 2 pcs.;
  • 4 cloves of garlic and peppercorns;
  • pork belly - 500 g;
  • soy sauce - 40 ml;
  • filtered water - 500 ml;
  • onion - (5 pcs.) and husk (5 g);
  • lemon;
  • table salt - 100 g;
  • liquid smoke.

Cooking process:

  1. For our dish you need a good handful of clean husk. These are approximately 7 peeled onions. Get ready for the fact that your dishes from the inside are seriously stained.
  2. We spread the dry composition in a pan, fill it with water, heat to a boil. Add laurel leaves, soy sauce, juice of half a lemon, a pinch of salt, peppercorns, sliced ​​garlic, a few drops of liquid smoke. Bring the mixture to a boil, cook for 15 minutes.
  3. Cut the brisket into small slices, immerse in a cooled composition. We send pork for an hour and a half to the refrigerator. This time is quite enough for the meat to be saturated with the aromas of seasonings and spices and take on a brightly saturated red tint.
  4. We take out the product from the onion composition, remove excess moisture with napkins, put it on a baking sheet covered with foil. This peerless dish is best prepared at home, using fresh and high-quality products.

Necessary components:

  • fennel in the form of seeds - 2 tbsp. l .;
  • cloves of garlic - 3 pcs.;
  • olive oil - 30 g;
  • pork belly - 2 kg;
  • lemons - 2 pcs.;
  • pepper, thyme (large bunch), salt (preferably sea).

Cooking method:

  1. All spices must be fried without oil, rub in a mortar, adding a pinch of sea salt and half a bunch of thyme. We use exclusively plant leaves. Only in this way can you reveal the whole bouquet of aromas and flavors of spices.At the end of the process, mix the composition with two tablespoons of olive oil.
  2. We place a piece of meat on a cutting board, rub the cooked spicy mixture, sprinkle with the remaining thyme leaves. We turn the layer with the filling into a tight roll, dress it with threads, send it in a sealed container to the bottom shelf of the refrigerator.
  3. We pickle the pork belly overnight, after which we rub the product with salt, process it with olive oil, and send it to the oven. The first half hour we bake the dish at 200 ° C, then pour the roll with lemon juice, reduce the heating to 180 degrees.
  4. We continue cooking for another 2 hours, then return to the original temperature. Hold the brisket for the next half hour to form a golden crust.
