Classic mushroom soup from mushrooms

The simplest fresh mushroom soup is easy. To do this, you need a minimum set of products:

  • honey agarics - 300 g;
  • potatoes - 4 pcs.;
  • onion - 1 small;
  • carrot - 1 pc.;
  • water - 1 l;
  • vegetable oil - 2 tbsp. l .;
  • salt - ½ tsp;
  • spices - optional.

Work Stages:

  1. We clean fresh mushrooms, rinse under running water to remove all dirt. Cook on low heat for about 30 minutes, drain the water, rinse and repeat the procedure.
  2. Grind honey agarics with straws or leave whole (depending on their size).
  3. Fill with fresh water, send to the fire.
  4. We clean the potatoes, cut them into cubes and send them to the mushrooms.
  5. Finely chop the onion, and rub the carrots on a coarse grater.
  6. We pass the vegetables in a small amount of oil until they turn golden.
  7. We enter the dressing into the pan, but not earlier than its contents are boiled for 10 minutes.
  8. After another 5 minutes, add spices and salt.
  9. Ready soup needs to be infused for about 30 minutes.

With the addition of champignons

To make the familiar taste of the soup more saturated, we use another type of mushroom. To create such a treat you need:

  • frozen honey mushrooms - 50 g;
  • fresh champignons - 250 g;
  • potato tubers - 4 pcs.;
  • onion - 1 medium;
  • carrots - 1 pc.;
  • green onions - 5 feathers;
  • French or Provencal herbs - 1 tsp;
  • ground black pepper - ½ tsp;
  • sour cream - a spoon.

Stages of preparation:

  1. Fry carrots in a saucepan in vegetable oil.
  2. Add onion.
  3. Pour mushrooms to the vegetables, mix, fry for 5 minutes.
  4. We put the champignons, cut into quarters, continue cooking.
  5. Season with spices, combine the ingredients, fry for another 7 minutes.
  6. Add chopped potatoes.
  7. Pour chopped green onions.
  8. Add boiled water a little. Its total volume should be at least 1 liter.
  9. Salt the soup, bring to a boil and cover with a lid.
  10. Cook for 15 minutes over low heat.
  11. We give the soup more time to brew, season with sour cream and serve.

Cooking with cream

Cream will help make mushroom soup even tastier and more tender. The result of culinary work will be a fragrant dish, the creation of which will require the following products:

  • honey agarics - 400 g;
  • fat cream - 1 tbsp .;
  • carrot - 1 pc.;
  • onion - 1 pc.;
  • butter - 1 tbsp. l .;
  • flour - a pinch;
  • salt and spices - according to taste preferences.

 

Work Stages:

  1. To make mushroom soup puree with cream, you should initially "conjure" over honey mushrooms. Boil the ingredient in slightly salted water for 5 to 7 minutes.
  2. At this time, fry the vegetables in butter. To do this, cut the onion into small cubes, and grind the carrots on a grater.
  3. Pass the prepared ingredients through a blender to make a homogeneous gruel. In the process of whipping, add flour and cream. We mix the result with the remaining mushroom broth, put on fire, bring to a boil.
  4. Salt, season with spices, remove from heat.

Advice! Instead of flour, you can use boiled potatoes.

How to boil dried mushrooms

Very often, instead of frozen or fresh mushrooms, the housewives find their dried counterpart. You can also prepare a delicious soup from such mushrooms, but for this you will need such products:

  • dry mushrooms - 60 g;
  • butter - 15 g;
  • water - 2 l;
  • potatoes - 250 g;
  • carrot - 1 pc.;
  • onion - 1 pc.;
  • salt - 1 tsp;
  • pepper - 5 peas;
  • flour - 1 tbsp. l with a slide;
  • Lavrushka - 2 leaves.

Work Stages:

  1. Dry mushrooms pour 300 ml of boiling water. Leave for 30 minutes.
  2. Fry finely chopped onions in a pan. After 2 - 3 minutes, add carrots, chopped on a grater.
  3. After 5 minutes, add flour to the vegetables, mix. Keep on fire for another 3 minutes.
  4. Pour water into the pan, add the swollen mushrooms.
  5. The liquid where honey mushrooms were lying is filtered and sent to the future soup.
  6. Cut potatoes into cubes, send to other ingredients. Cook for 15 minutes.
  7. We shift the vegetable sauce. Add salt, spices and lavrushka.
  8. We continue to cook the soup for another 5 to 7 minutes.
  9. Before serving, you must brew at least an hour.

Advice! To make the taste of the soup more saturated, at the end of cooking, you can add a little grated hard cheese.

Mushroom Soup

Honey mushrooms are an excellent ingredient for making mushroom soup puree. Despite the simplicity of creation, such a treat can be served even on holidays.

Essential Ingredients:

  • honey agarics - 400 g;
  • onion - 1 pc.;
  • potato tubers - 3 pcs.;
  • cream - 500 ml;
  • butter - 100 g;
  • salt, spices - according to taste preferences.

 

Work Stages:

  1. Dice potatoes, boil in slightly salted water.
  2. Honey mushrooms cut into strips, fry with onions. After 2 minutes of cooking, add the carrots cut in the rounds.
  3. Combine mushroom dressing with potatoes.
  4. After 10 minutes of cooking, turn off the heat, cool the dish a little, pour into the blender bowl, and mash.
  5. Return to the pan, add cream, mix. Bring to a boil, salt and season with your preferred spices.
  6. Serve to the table with fresh herbs or a slice of lemon.

The first dish of frozen mushrooms

No less delicious is mushroom soup made from frozen honey mushrooms. The main thing is to adhere to the recipe for cooking.

Required Products:

  • frozen mushrooms - 350 g;
  • potato tubers - 5 pcs.;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • water - 2 l;
  • butter -1 tbsp. l .;
  • flour - 1 tbsp. l .;
  • sour cream - 2 tbsp. l .;
  • Lavrushka - 2 leaves;
  • dill - a bunch;
  • salt and pepper to taste.

Stages of preparation:

  1. For starters, you should defrost the mushrooms. To do this, put honey mushrooms in a pan, pour hot water. Bring to a boil and boil for about 5 minutes.
  2. Peel the potatoes, chop the straws. Add to the mushrooms.
  3. Three carrots on a fine grater, and chop the onion in half rings.
  4. Put oil on a hot pan, fry vegetables until cooked.
  5. Add flour, mix. From the saucepan, take 1 soup ladle and pour into the pan. Mix vegetable sauce, simmer for another 3 minutes.
  6. We pour the dressing to the mushrooms, combine the components and simmer for 10 minutes.
  7. Finely chop the fresh herbs, add to the pan.
