Buckwheat with vegetables - what could be easier? And meanwhile, the ability to cook the simplest dishes deliciously and with a twist is the indicator of the hostess's qualification. So why not please your loved ones with your favorite Russian food - buckwheat porridge with vegetables or meat, cooked in the oven or in a pan? Fragrant, crumbly, delicious!

General tips

Do I need to wash cereals before cooking? Many do not wash, but still it is better to sort it out first before cooking, then rinse it (empty and defective grains float), and then use it.

Buckwheat is first fried, which, of course, gives it a more intense aroma and taste, and after cooling it, too, should be slightly doused with water. Further, cereals can be prepared by any of the proposed methods.

Buckwheat with vegetables stewed in a pan

This is the simplest, cheapest and at the same time useful cereal dish.

There are no unusual or seasonal ingredients in it - only what is in any kitchen always:

  • buckwheat (in St. Petersburg it is lovingly referred to only as buckwheat, and in the Explanatory Dictionary - kernel) - two glasses;
  • a pair of medium onions;
  • one large carrot or two smaller;
  • vegetable oil - half a cup;
  • sugar and some salt.

For any recipe, buckwheat before cooking, we recommend a little fry. So it will become even more fragrant, crumbly, and at the same time it will not be "a little mess", even if you digest it.

Preparing such a dish is very simple.

  1. Rinse the groats, cut the onions into cubes, grate the carrots coarsely. For the sake of aesthetics, you can use a Korean grater.
  2. Heat oil in a frying pan and put onion to fry.
  3. After 8 - 10 minutes add carrots to it and continue frying.
  4. Pour a teaspoon of sugar - it will add spice. Salt.
  5. The pan in which the vegetables are fried does not need to be covered.When the carrots “grab” a little, pour the fried and washed buckwheat. Mix everything.
  6. For about five minutes, hold the cereal with vegetables on a fire so that the oil is absorbed into it.
  7. Now add 2 cups of boiling water from the kettle and, having covered with a lid, extinguish the dish over low heat to evaporate all the liquid. Even if buckwheat is a little harsh - not scary. Just leave it under the lid for another ten minutes to “get it.”

Serve this kind of porridge as a side dish for meat or as an independent main dish. This is a great and easy option for fasting.

And for those who are passionate about healthy eating, we can recommend adding buckwheat to the fried vegetables, previously soaked in water. In this case, we don’t cook cereals, but pour them overnight or for several hours with clean cold water. Then we simply add the swollen and ready-to-use kernel and stew it very slightly in a pan with vegetables, just to warm it a little. Everything, a healthy dish is ready, and all the vitamins are in place!

Cooking in a slow cooker

Buckwheat with vegetables in a slow cooker is a fairly quick dish to prepare. You can take different vegetables, up to zucchini, squash and eggplant.

However, if you do not have a variety of vegetables at hand, you can restrict yourself to a simpler set:

  • 1 onion;
  • 1 carrot;
  • 1 tomato;
  • 1 bell pepper;
  • a couple of cloves of garlic;
  • salt and pepper to taste;
  • vegetable oil - 3 tbsp. spoons;
  • buckwheat - 100 g;
  • water - one and a half glasses.

Next, do this:

  1. We clean all the vegetables, cut into cubes. Some recommend grating carrots, and cut onions in half rings. The advice is this: all the vegetables are still better to do a uniform look - this decorates the dish.
  2. In a preheated bowl, heat the oil, put onion and carrots in it, set the mode to "Frying" for 10 minutes (without a lid).
  3. We lay the pepper and in five minutes - tomatoes.
  4. At the end of frying, add chopped garlic, salt and ground pepper. We mix everything, pour the prepared buckwheat in advance and set the “Porridge” mode for 20 minutes.

Buckwheat with fried vegetables

In this dish, it is important to properly cook the cereal so that it turns out to be dense and not boiled. It is equally important to fry vegetables beautifully. Then the dish will be elegant and mouth-watering.

We will prepare:

  • a glass of cereal;
  • medium onion;
  • zucchini;
  • two cloves of garlic;
  • a pair of dense tomatoes;
  • half a small head of cauliflower, sorted into inflorescences;
  • salt pepper.

It would be nice for such a dish to take zucchini zucchini and chop it without removing the skin. This will give the dish a bright look.

Next, do this:

  1. Peel and chop vegetables.
  2. Pour buckwheat into a saucepan, pour two glasses of water and, bringing to a boil, cook over low heat until tender.
  3. While the cereals are cooked, cut the vegetables into beautiful cubes.
  4. Pour vegetable oil into a pan and heat it. At first, fry the onions over a large fire, and then alternately lay the finely chopped garlic, zucchini, cabbage, pepper, and tomatoes at the very end.
  5. Salt and pepper, add buckwheat to the fried mixture. Mix.
  6. Now it remains to reduce the fire to a minimum and hold for five minutes the dish on fire, so that the groats absorb the aromas and tastes of vegetables. Serve with chopped herbs.

With meat

A very tasty and nutritious dish is obtained if you add a little meat to the vegetables. It can be finely chopped pork, beef or chicken. And you can use ready-made pork and ground beef. In any case, buckwheat with vegetables and meat is a hearty and tasty dish.

Based on 150 g of raw kernel, we take the following products:

  • 1 pc. carrots and onions;
  • 3 pcs. bell peppers and tomatoes;
  • 250 g of minced meat or meat;
  • a couple of cloves of garlic;
  • half a glass of broth (if not, replace with water);
  • 100 g of sour cream;
  • one and a half glasses of water;
  • a little vegetable oil for frying;
  • some pepper, salt and dried herbs.

Cooking like this:

  1. First of all, you need to boil buckwheat in water. While it is boiling, make the sauce.
  2. If meat is used, then it must be cut into small pieces and fry in vegetable oil until tender.Next, add onions with garlic, carrots and pepper in turn, then put tomatoes and sour cream in the tomato. Salt, pepper, pour herbs, mix and simmer for about ten minutes.
  3. Add buckwheat porridge to the finished sauce and mix again, warm for several minutes.

If you cook with minced meat, then vegetables are first fried, then minced meat is added and all the ingredients are cooked together. After that we put sour cream with tomato and stew. Add buckwheat.

How to make a chicken dish

A simple hearty dish without frills is cooked with chicken. On a glass of buckwheat we take a couple of legs (or four to five legs), a couple of chives, an onion and a couple of tbsp. tablespoons of mayonnaise.

Now we do it.

  1. First, soak buckwheat in a glass of boiling water for about ten minutes.
  2. While it swells, cut the legs, season with a little salt and pepper, and then roll in mayonnaise.
  3. When the meat is a little marinated, we cut the onion in half rings and fry a little in a pan with butter.
  4. We put the cereals with the liquid in the form, add the onions, put the chopped garlic in the same place. All salt and mix.
  5. Now it remains to spread the ham over the buckwheat and cover it with foil, put the dish on the stove for about an hour. About ten minutes before the readiness to remove the foil - the legs should be lightly browned.

Oven recipe

Usually, recipes for making buckwheat with vegetables are based on the classic combination of carrots, onions and sweet peppers. We offer a recipe in the oven, which is fundamentally different from all traditional ones. But rest assured, the result is no less tasty and healthy.

This is buckwheat with cabbage, Brussels sprouts and cauliflower, cooked in milk.

It will be required:

  • cauliflower - 100 g;
  • Brussels - three heads of cabbage;
  • milk - half a glass;
  • water - half a glass;
  • pepper, coarsely chopped dry paprika, salt;
  • buckwheat - half a glass;
  • butter - 1 teaspoon.

We will bake in pots (the layout is given for one large). Cooking:

  1. Pour washed grains into the pot.
  2. We spread the cauliflower and Brussels sprouts inflorescences on it (if it is large, then cut it into quarters).
  3. Salt, pepper, sprinkle with paprika, pour milk and water, add oil.
  4. Covering with a lid or foil, put in the oven for 40 - 45 minutes.

Buckwheat as a merchant

A delicious version of buckwheat with pork has become a classic dish of Russian cuisine.

For 300 g of pork without bone you will need:

  • 2 glasses of buckwheat;
  • 1 onion;
  • 1 carrot;
  • 3 tbsp. tablespoons of vegetable oil;
  • 20 g of parsley and dill;
  • salt and ground pepper, spices to taste.

Let's start cooking like this:

  1. We cut pork medium-sized. Fry in oil until crust over high heat.
  2. Season with spices and salt. Reduce the heat, fry until tender and put in a pan with a thick bottom.
  3. Pour the diced carrots and onions into a frying pan and fry. We combine in a pan with meat.
  4. We saute the buckwheat in a dry frying pan and also transfer it to the pan.
  5. Add 4 cups of boiling water, salt and cook for 30 minutes over low heat until the cereal is ready.
  6. Sprinkled with greens in plates, serve buckwheat on the table.
