This seafood can be called very difficult to prepare. But it’s worth learning a few simple secrets on how to cook it, and new delicious dishes will appear on the family menu. Stuffed squids are always very successful. They are good with almost any filling.

Squid stuffed with cheese and mushroom stuffing

This savory stuffing is a win-win. It will appeal to even the most fastidious gourmet. Ingredients: 3-4 carcasses of seafood, onion, 1.5 tbsp. homemade sour cream, a bunch of fresh herbs, a large slice of butter, 120 g of hard or semi-hard cheese, 3 pcs. large eggs, a pinch of pepper, garlic to taste, salt.

  1. The mollusk is cleansed of the films, viscera. If the carcass has a head left, it will also need to be removed. As a result, the cook should have a flat area for the filling.
  2. If tentacles are left from the seafood, they can be chopped and sent to the filling.
  3. Mushrooms with finely chopped onions are fried in butter.
  4. Cheese is grated, and eggs cooked until tender are cut into cubes.
  5. The amount of garlic should be adjusted to your liking. His teeth are passed through a press.
  6. All the ingredients of the filling are mixed, salted, peppered, seasoned with sour cream (a pair of spoons) and laid inside pre-prepared carcasses of the mollusk.

This is an even more satisfying version of the discussed treat. Ingredients: 860 g squid, 380 g fat sour cream, salt, large onion, 6 medium chicken eggs, 1 tbsp. long white rice, a large spoon of tomato paste.

  1. The cereal is cooked until soft, the eggs are hard boiled.
  2. A roast is prepared from onion. Already a golden vegetable is poured with tomato paste and stewed for a couple of minutes.
  3. Component fillings are combined and salted.
  4. Mollusk carcasses are cleaned, beaten and rubbed with salt, and then stuffed with filling. It is better to fix their edges with toothpicks.
  5. First, the squid stuffed with rice is fried in a skillet to a crust, then they are transferred to a mold, filled with sour cream and stewed for 25-35 minutes at medium temperature.

Served with a lot of chopped herbs.

With meat stuffing in the oven

This combination may seem strange, but in fact it is the seafood in question that goes well with meat. Ingredients: 280 g of pork, 2 large clams, carrots, tomato, onion, a couple of celery stalks, beaten egg, 2 large spoons of soy sauce without additives and as much light flour, lemon, garlic, salt.

  1. Carcasses are prepared for stuffing. It is most convenient to turn them out for this.
  2. The meat is finely chopped, and all the vegetables used are cut into small pieces.
  3. Squids are rubbed with salt, watered with lemon juice and left for half an hour.
  4. Vegetables are fried in well-heated oil. You can add garlic to the mass immediately.
  5. The meat slices are laid out in a frying pan, soy sauce is poured, and the future filling is languished under the lid for 7-8 minutes.

Of course, fresh crabs are not required for such a treat. It is enough to take 120 g of crab sticks. Other ingredients: 4 carcasses of mollusks, 2 pcs. large boiled eggs, 100 g of boiled white rice, salt, 3 large tablespoons of mayonnaise.

  1. First, squids get rid of everything superfluous (films, tentacles, etc.), after which they cook for 40 seconds in salted boiling water.
  2. Eggs and crab sticks are chopped finely. The latter are best taken chilled and very juicy. Otherwise, the filling may turn out to be rather dry, despite the presence of mayonnaise.
  3. The filling is stacked in prepared squid.

In general, the treat is completely ready and it can be served at the festive table. But if you wish, you can easily turn the appetizer into a full-fledged hot dish. To do this, the top of the carcasses is smeared with mayonnaise, and the mollusks in oiled form for 12-15 minutes are sent to a hot oven.

With cottage cheese and shrimp

Some housewives are sure that shrimp categorically do not combine with dairy products. In fact, a dish according to such a recipe will turn out to be surprisingly tasty and tender. Ingredients: 3 medium carcasses of squid, 220 g of small shrimps, 380 g of cottage cheese, 3-4 garlic cloves, a pinch of salt, paprika and a mixture of ground peppers, a few feathers of green onions, 3 large tablespoons of mayonnaise.

  1. First of all, for the filling, the cottage cheese is thoroughly kneading with a fork, so that it becomes more tender and uniform. Then the mass is salted, dressed with mayonnaise. Crushed garlic, small pieces of green onions, a mixture of ground peppers are added to it.
  2. Shrimps are boiled in salt water until cooked, after which they get rid of heads and shells. If you take an already refined product, then it turns out to be less aromatic during cooking.
  3. Shrimp sprinkled with paprika and sent to the curd. After thorough mixing, the filling is completely ready.
  4. Mollusk carcasses get rid of chitin plates (internal), the upper film and other excess parts. Further, they are boiled in salt water for 3-4 minutes, after which they are poured with ice water.
  5. When the excess liquid drains from the squid, you can stuff them tightly with the prepared filling.

It remains to cool and serve the food to the table, slicing in portions.

Stuffed with Mashed Potatoes

This interesting dish combines immediately the meat component and the side dish. As a result, a full-fledged lunch will be on the table, which is also very useful due to the huge amount of vitamins and minerals in the seafood. Ingredients: 6 carcasses of a clam, a large chicken egg, 70 ml of fat milk, 7 medium potato tubers, salt, hard cheese to taste.

  1. Potatoes are cooked in salt water until soft. Almost all of the water is poured from the pan with the finished product, except for 50-70 ml. With the remaining liquid, you need to crush the tubers, and then add the raw egg and warm milk to the mass.
  2. If you wish, you can complicate the filling by combining the potatoes with onions sautéed in butter.
  3. The mollusk carcasses are washed and, if necessary, get rid of the upper film. Next, seafood is boiled in boiling salt water for 3-4 minutes.
  4. Prepared pockets are stuffed with mashed potatoes and laid out on an oiled baking sheet. Top of the workpiece to taste sprinkled with plenty of hard cheese. Replace it with melted or regular mayonnaise.
