Stuffed eggplant is a wonderful summer dish. In the vegetable season, it’s a sin not to make such an appetizing and healthy snack!

Oven stuffed eggplant

Stuffed eggplants in the oven are hearty and delicious. Minced meat can be taken any, the necessary juiciness will give it vegetables.

Necessary components:

  • blue - 3 fruits;
  • minced meat - 0.4 kg;
  • bow - head;
  • tomatoes - 2 pcs.;
  • garlic - 2 cloves;
  • hard cheese - 150 g piece;
  • greens - a small bunch;
  • sour cream, oil, salt and pepper - as needed.

Sequencing:

  1. Prepare the fruits and cut them in half. With a sharp knife, remove the middle so that there are walls no more than 10 mm thick. Salt the workpieces and leave for a third of the hour.
  2. Cut the pulp into cubes, salt and set aside.
  3. Drain the water from the “boats”, rinse with water and pat dry with a paper towel. Put on a baking sheet and grease with oil. Bake a quarter of an hour in the oven.
  4. Meanwhile, chop the garlic with onions, herbs, tomatoes (previously scalding them in boiling water and removing the peel). Grate the cheese.
  5. Fry the flesh of the blue ones, put in a separate plate.
  6. In the same pan, pass the onion with garlic, add the eggplant pulp to the pulp.
  7. Fry minced meat until ready. Add prepared vegetables, chopped tomatoes and greens to it. Salt, season to taste and mix.
  8. Fill blanks with filling. Grease with sour cream and sprinkle with cheese chips.

Bake for at least half an hour.

Cooking with vegetables

Vegetarians and people who are not particularly keen on meat can stuff blue vegetables. A set of them can be any, but most often used tomatoes, onions, carrots, zucchini.

What do you need:

  • blue ones - 3 fruits;
  • onion - 2 heads;
  • carrots and sweet peppers - 1 pc.;
  • tomatoes - 2 pcs.;
  • garlic - 2 cloves;
  • cheese - a 100 gram piece;
  • sour cream or mayonnaise - 100 g;
  • salt with pepper.

How to cook:

  1. Prepare the fruits, form boats out of them and sprinkle with salt. Chop the flesh and salt too.
  2. Grind the remaining vegetables, grate carrots. Fry everything from onions to tomatoes and garlic. Salt, pepper, stir and simmer for 3 minutes.
  3. Fill the halves of blue with minced meat, grease with sour cream and sprinkle with cheese.

Put on a baking sheet, oiled, and bake for 35 minutes.

Cheese and Garlic Rolls Recipe

Blue rolls are one of the most popular summer snacks. Of course, you can’t call it dietary, but occasionally you can treat yourself to such a delicious and mouth-watering dish.

 

Necessary components:

  • blue - 2 fruits;
  • eggs - 4 pcs.;
  • cheese - a 200 gram slice;
  • garlic - 3 cloves;
  • mayonnaise - 4 tbsp. l .;
  • salt and oil - as needed.

Sequencing:

  1. Cut the fruit into thin strips along. Salt and leave for a third of the hour.
  2. Meanwhile, boil the eggs, grate them with cheese.
  3. Pass garlic through a press, combine all these components with mayonnaise and mix.
  4. Fry the food in a pan and immediately put it on a paper towel to remove the remaining oil.
  5. Put the filling on the edge of the blanks and roll them up with rolls.

Give a snack in the refrigerator before serving at least half an hour. Garnish with greens.

If desired, during the folding of the rolls in the middle, you can put a thin slice of tomato: it will be very beautiful.

Tasty preparation for the winter

Pickled eggplant stuffed with carrots and garlic go well with potatoes or baked meat.

Necessary components:

  • blue ones - 1 kg;
  • carrot - 3 pcs.;
  • spicy roots - 100 g;
  • garlic - head;
  • salt - 2 tbsp. l (for boiling on 2 l of water) and 2 tbsp. l (on 3 l of marinade);
  • black pepper - 1 tsp;
  • paprika - 1 tbsp. l .;
  • parsley - a bunch (greens will go as spices, and stems - to bind stuffed blue);
  • bay leaf - 4 pcs.;
  • peppercorns - a dozen.

How to cook:

  1. Boil blue in salt water (about 10 minutes from the start of boiling). Before this, you can make punctures on the sides of the fruit so that the peel does not burst during cooking.
  2. Put the fruits under the press to remove excess moisture and bitterness.
  3. Cut the squashed blue in half, but not to the very end.
  4. Grind root vegetables, add spices and herbs.
  5. Grate the cuts with chopped garlic and stuff. Bandage with parsley stalks. If suddenly such a trick failed, you can use ordinary threads and fix the workpieces with them.
  6. Place blanks at the bottom of a large container.
  7. Make a marinade from water, salt, pepper and laurel and pour them over the contents of the pan.

Keep at room temperature for at least 2 weeks under oppression. Then take a sample. If the blue ones are ready, put them in a cold place. If not, leave in the room for a week.

Appetizing blue boats

A delicious snack can be made on the basis of blue and mushrooms. This is one of the most successful combinations.

Necessary components:

  • blue - 3 fruits;
  • champignons - 300 g;
  • onion - 2 heads;
  • tomatoes and peppers - 2 pcs.;
  • garlic - 2 cloves;
  • cheese - a piece for sprinkling;
  • oil, herbs, salt and pepper - to taste.

Sequencing:

  1. Cut mushrooms and fry them. To salt.
  2. Chop vegetables.
  3. Prepare the fruits, making them "boats". Salt and wait about 20 minutes. Do not discard the pulp, but cut into slices.
  4. Lubricate the workpieces with oil and put in the oven for a quarter of an hour.
  5. Fry vegetables, chop garlic, herbs and add to the pan at the very end.
  6. Combine the mushroom and vegetable mass, mix.
  7. Fill the blanks with filling and sprinkle with cheese.

Bake for another quarter hour until golden brown.

There are no special difficulties in preparing these blue dishes. And if there is no ingredient, it can be easily replaced with something else.
