Classic recipe

This dough is suitable for sweet cakes, as well as meat and any other filling. Products will turn out magnificent, ruddy, very appetizing and tasty. Preparation of the test is very simple, so do not worry about the failure. Even novice hostesses will cope.

Ingredients required:

  • milk - 0.5 l;
  • eggs - 2 pcs.;
  • raw yeast - 20 g;
  • salt - 1 tsp;
  • sugar - 1.5 tbsp. l .;
  • flour - 2.5-3 tbsp. (depends on the size of the eggs);
  • baking powder - 1 tsp. or 0.5 tsp soda.

If you use soda, it will need to be pre-populated with a few drops of vinegar or lemon juice.

Cooking:

  1. Pour milk into an enameled cup that can be put on fire. Add sugar and salt, stir. Put milk on gas, heat to about 35 degrees. When combined with a cold liquid, the yeast will not work as it should, and the dough will rise very slowly.
  2. Dissolve the yeast in milk, add a third of the prepared flour. Mix well, but if small lumps remain, do not worry. Cover the cup with a bag, put in heat for 15 minutes. Opara should begin to rise, foam during this time.
  3. After a prescribed period of time, beat the eggs into the dough, put the baking powder (slaked baking soda), put the rest of the flour.
  4. Pour a little flour onto a table or board, place the dough on it, knead with your hands for 5-7 minutes.Next, grease the dough with a small amount of sunflower oil, put it in a basin or a large bowl, cover, leave to rise.

To make an airy yeast dough, you can’t start working with it immediately after raising it, you need to lower it three times by patting your hands and only start the oven from the fourth time.

Sour milk yeast dough for pies

If you have sour milk, then do not rush to pour it, because you can put dough on it. And the product will not disappear (it's all the same money), and you will delight your family with pastries. The dough on sour milk in pies tastes the same as that made from fresh - it turns out incredibly fluffy and tender.

 

Ingredients required:

  • sour milk - 0.5 l;
  • egg - 2 pcs.;
  • flour - about 3 tbsp .;
  • baking powder - 1 tsp. or 0.5 tsp. soda (in this case, it is not necessary to extinguish with vinegar, since in sour milk there is enough acid to neutralize the alkali);
  • salt - 1 tsp;
  • raw yeast - 20-25 g;
  • sugar - 2 tbsp. l

Stages of cooking:

  1. Heat the milk to 35-38 degrees, dissolve sugar, salt and yeast in it. Mix with half 1/3 of the prescribed amount of flour, put, covered with cellophane, in a warm place (can be put on the battery or on a gas stove, under which the oven is turned on). In order for the dough to rise, an average of 15-20 minutes is required. You will see how the batter begins to foam.
  2. Add eggs, baking powder or soda, remaining flour. Knead the dough with your hands, as a result, it does not stick much to the skin, but it should not be too hard either.
  3. Lubricate the palms with sunflower oil, wipe the dough, so it does not dry out until it rises (if the oil is not lubricated, a crust will appear on the dough even under the lid). Put the dough in a deep container, cover, send to rise.

As described in the previous recipe, you need to let the test rise three times, but only from the fourth you can start working with it.

Cooking in a bread machine

Cooking dough in a bread machine is a real pleasure! This machine will make any dough perfectly, the hostess only needs to load the products and you can go about your business. We offer a universal recipe suitable for any pies and pies.

Ingredients:

  • milk - 0.5 l;
  • eggs - 2 pcs.;
  • raw yeast - 25 g;
  • butter or margarine - 50 g;
  • sugar - 2 tbsp. l .;
  • salt - 1 tsp;
  • baking powder - 1 tsp.

Cooking:

  1. Heat the milk, dissolve the yeast, butter or margarine in it. Pour bread in a bucket, add sugar and salt, baking powder and eggs.
  2. Sift flour, send to other components.
  3. Set the yeast dough mode.

That's all. The bread maker mixes everything herself, kneads, in it the dough will rise properly.

Dry Yeast Recipe

Dry yeast is a little easier to use than raw: you do not need to measure, dissolve anything. Just mix with flour, combine with milk, wait for the dough to cook, which rises no worse than when using raw yeast. That is why most modern housewives prefer to use dry yeast.

For the test you will need the following products:

  • milk - 0.5 l;
  • flour - 2.5 tbsp .;
  • eggs - 2 pcs.;
  • dry yeast - 1 pack;
  • sugar - 2 tbsp. l .;
  • salt - 1 tbsp. l .;
  • baking powder - 1 tsp.

If using soda, quench it with vinegar.

Cooking:

  1. Mix yeast with 1/4 of the required amount of flour. Heat the milk, add flour and yeast, sugar and salt to it. Mix well, cover with a plastic bag, leave warm for 15-20 minutes. Foaming mass will say that you can do the test further.
  2. Beat eggs, add baking powder or slaked soda, and the rest of the flour. Stir, then thoroughly knead the dough with your hands, grease it with sunflower oil.

Leave the dough to rise. Three times after lifting, you need to lower, slightly patting.

Puff pastry dough

You can make yeast dough for magnificent pies even without eggs. It will be very light, tasty.

 

Ingredients:

  • milk - 0.5 l;
  • flour - 2-2.5 st .;
  • sugar - 2 tbsp. l .;
  • salt - 1 tsp;
  • sunflower oil - 1/3 st .;
  • dry yeast - 1 pack

Baking powder is not required, as there are no eggs in the recipe. The dough will be easy to rise, it will be light and fluffy.

Step-by-step dough preparation:

  1. Heat the milk to 35-38 degrees by mixing sugar and salt in it.
  2. Measure out about 1/4 of the flour, mix it with dry yeast, put into milk. Stir, leave to rise.
  3. After 15-20 minutes, when the dough is foaming well, you need to pour in the sunflower oil, fill in the remaining flour, knead.

Place the dough in a deep bowl, cover with a lid or bag, leave to rise warm.

How to make in milk powder

The taste of the dough will turn out to be very interesting if you put it on milk powder. A pleasant creamy shade will be felt. You can use both ordinary milk powder and infant formula. In both cases, an excellent result will come out.

Ingredients:

  • powdered milk - 4 tbsp. l .;
  • water - 2 tbsp .;
  • flour - 2-5 tbsp .;
  • sugar - 1 tbsp. l .;
  • salt - 1 tsp;
  • egg - 1 pc.;
  • baking powder - 1 tsp;
  • sunflower oil - 3-4 tbsp. l .;
  • dry yeast - 1 pack or 25 g raw.

Cooking method:

  1. Heat water, add milk powder into it, mix thoroughly so that there are no lumps. Add sugar and salt, yeast if using raw. Stir 1/4 part of the flour (if the yeast is dry, then first mix the flour with them), leave it under the bag in the heat for 15-20 minutes.
  2. Drive eggs into the dough, add baking powder, butter and the rest of the flour. Knead the dough, let it rise 3 times, with 4 you can start cooking the pies.

The recipes described in the publication are universal for any baking. If you want to create a lot of sweet cakes, you can add more sugar, you can mix raisins or dried fruits in the dough for rolls.
