Universal recipe

It doesn’t matter what you plan to bake: such a versatile dough is suitable for buns, pies, bread, and pies!

To make the dough, you need:

  • wheat flour - 550-570 g;
  • granulated sugar - 30 g;
  • live yeast - 15 g;
  • margarine (confectionery) - 30 g;
  • filtered water - 150-155 ml;
  • a pinch of table salt.

  1. Grind the indicated volume of yeast with your hands, and then pour it into a bowl. Add a third of the planned amount of regular sugar. Pour with two tablespoons of warm water. Cover with foil or flat plate.

  3. If all is well, pour the second part of the sugar and salt dissolved in the remaining water (up to 36 degrees).
  4. Alternatively, introduce pre-melted margarine. And also sift wheat flour of the highest grade.
  5. Knead yeast dough for 10-15 minutes on water to a soft elastic consistency. Form a ball, lay in a bowl, the walls and bottom of which are finely oiled.
  6. Leave the mass to infuse for an hour. To do this, choose a warm place. After this short time, knead the dough. Everything is ready for further cutting.

Egg-free yeast dough

To make the pies with different fillings the most delicious, it is recommended to add both water and milk to the composition. But it is better to replace vegetable oil with butter.

Ingredients Required:

  • sifted flour - 0.5 kg;
  • milk - 80 ml;
  • water - 80 ml;
  • a pinch of salt in the dough;
  • yeast (live) - 14-15 g;
  • granulated sugar - 2 tbsp. l .;
  • butter - 30 g.

Step-by-step instruction:

  1. Disassembled into small pieces pour yeast with a spoonful of sugar in waterbrought to 32-35 degrees with water (entire volume).

  • flour (premium) - 0.5 kg;
  • refined oil - 2 tbsp. l .;

  • active yeast - 12 g.

  1. Pour sugar, salt and active yeast in granules into a suitable container. Pour and mix with warm water. Sift a third of the flour. Knead the dough.

How to make for buns

It is important to add kefir to the pastry for buns, not water, so that in the end you will get the most tender pastries!

Required Products:

  • warm kefir - 1/2 cup;
  • wheat flour - 0.4 kg;
  • instant yeast - 1 sachet;
  • a pinch of table salt;
  • granulated sugar - 1 tbsp. l .;
  • butter - 20 g.

Step by step recipe:

  1. Pour sugar, instant yeast (12 g) and sodium chloride into a high bowl. And also sift the flour (the highest grade).
  2. Now pour the melted butter and warm kefir. These ingredients are best preheated in the microwave.
  3. Using a nozzle hook for 20 minutes, knead a soft, not very thick dough. After that, separate a few pieces. The approximate weight of each is about 70 g.
  4. Roll out a ball from each blank. Place everything on a baking sheet, which is best laid with thin parchment paper. Allow to distance for 20 minutes, after which grease the surface with whipped yolk. Now you can send to the oven.

The use of kefir will provide the buns with delicate pulp. But for taste and aroma, it is admissible to include grated cheese or crushed garlic in the composition of the dough, for which it is important to cut the core so that it does not bitter. Those who fast, it is sometimes difficult to choose dishes for their diet. But you can always make buns or bread, kneading the simplest dough from the minimum number of products.

Ingredients required:

  • live yeast - 10 g;
  • sifted wheat flour - 3 cups;
  • salt / sugar - 5 g each;
  • mineral table water - 140-150 ml;
  • vegetable oil - 1 tbsp. l

Step by Step Instructions:

  1. Combine salt, mashed yeast and sugar. Combine with warm mineral water, which is enough to heat up to 33-35 degrees in the microwave.
  2. Having finished the process, pour a spoonful of lean sunflower oil. After that, sift the highest quality flour.

For pies, it is better to use dough based on sour cream, which will make it simply airy and incredibly tasty!

 

To knead the dough, you will need:

  • sour cream - 100 ml;
  • wheat flour (highest grade) –450-470 g;
  • live yeast - 15 g;
  • granulated sugar - 45 g;
  • table salt - a pinch;
  • melted butter (butter) - 45 g;
  • water for yeast - 60 ml.

Step by step recipe:

  1. Dissolve sugar and yeast in a small amount of warm water. At the next stage, introduce room temperature sour cream, salt, liquid butter and sifted flour.
  2. Manually or in the combine knead the dough with yeast without eggs for pies for 10-12 minutes.
  3. When the mass stops sticking and acquires a homogeneous structure, form a ball that is thinly greased on all sides with oil.
  4. Insist for an hour, then roll out, add any filling to taste, arrange the pie and bake until cooked.

By increasing the amount of butter and sugar, you can achieve a brighter taste, which is very important for pies. But if you don't like fancy pastry with salty toppings, it is recommended to reduce the volume of these ingredients.
