Potato pancakes are the favorite dish of all. It is high-calorie, as fritters fry in a large amount of oil, but very tasty. Therefore, sometimes you can allow yourself to feast on the fried, golden and crispy potato pancakes with sour cream.

Traditional potato pancakes recipe

It’s not difficult to cook potato pancakes in Ukrainian. The main thing is to choose the right potato. It must be starchy, so that products from it are tender and keep their shape.

Necessary components:

  • potatoes - 7 tubers;
  • eggs - 1-2 pcs. (depending on size);
  • flour - 2-3 tbsp. l .;
  • oil - as needed;
  • salt and pepper to taste.

They say that eggs make the texture of the finished product more dense, so some housewives prefer not to add them.

Sequencing:

  1. Peel the tubers and grind. If there is a food processor, then the task is simplified: you can use it. Squeeze the juice lightly.
  2. Beat eggs, add flour, salt and pepper.
  3. Mix. Using a tablespoon, spread the mass into a pan and fry the workpieces on both sides until golden brown.

Potato pancakes are ready! Serve with sour cream.

With the addition of mushrooms and onions

Potato pancakes are especially tasty if you add mushrooms and onions to the list of ingredients. What is needed:

  • potatoes - 7 tubers;
  • bow - head;
  • mushrooms - 300 g;
  • flour - 75 g;
  • egg - 1 pc.;
  • oil - as needed;
  • sour cream - 3⁄4 tbsp .;
  • salt.

 

Potato Potato Recipe:

  1. Cut the mushrooms into slices and fry in a pan with a small amount of oil.
  2. Grind the onion on a fine grater, then potatoes. The potato mass should always be thrown into a colander to remove excess fluid. Stir, add sour cream and other components.
  3. Fry potato pancakes.

It turns out very tasty.Instead of mushrooms, you can use any other mushrooms. In the same way, you can cook products with meat (as a rule, minced meat is used for this).

Pansky potato pancakes are cooked a little differently. This will require the following components:

  • potatoes - 5 tubers;
  • egg - 1 pc.;
  • flour - 1 tbsp. l .;
  • cream - 2 tbsp. l .;
  • sausage and cheese - 100 g each;
  • champignons - 300 g;
  • bow - head;
  • salt and pepper - as much as needed.

Process:

  1. Combine chopped potato mass with egg, flour. Salt, pepper and mix.
  2. Grind cheese, cut into strips sausage.
  3. Divide the mass of potatoes into 3 servings, each fry in a pan (get 3 large items).
  4. In the process of frying, when the product is turned upside down, put cheese and sausage on one part of it and cover it with the other half. Get a crescent moon. Fry the workpiece well.
  5. Chop onions and mushrooms. Fry in oil, salt, season with cream.

Serve the pan pancakes with fried mushrooms.

Cheese and Garlic Option

Only fry products in a well-heated pan. Otherwise, they will resemble boiled potato patties. After frying, put the product on a paper towel so that the excess oil is gone.

Necessary components:

  • potatoes - 8 tubers;
  • hard cheese - 100 g;
  • garlic - 2 cloves;
  • bow - head;
  • flour - 4 tbsp. l .;
  • eggs - 2 pcs.;
  • oil - as needed;
  • salt to taste.

Sequencing:

  1. Grind potatoes on a coarse grater, cheese, garlic and onions - on a fine.
  2. Combine all the components of the recipe and mix well.
  3. Heat a frying pan with oil and with a spoon lay out the mass in the form of oblong fritters.
  4. Fry on both sides until golden brown.

Use with a sauce that suits your taste.

Potato fritters with pumpkin

 

In the fall, you can cook colorful pancakes with pumpkin. What do you need:

  • potatoes - 4-5 tubers;
  • pumpkin - 210 g;
  • eggs - 2 pcs.;
  • cream - 2 tbsp. l .;
  • sugar and salt to taste.

How to cook:

  1. Prepare vegetables, peel and grind them.
  2. Salt, add the remaining components. Mix.
  3. Heat oil in a skillet.
  4. Fry pancakes.

Serve with sour cream.

With green onions, paprika and nutmeg

Such pancakes are often made in the spring, when the first greens appear.

Necessary components:

  • potatoes - 10 pcs.;
  • eggs - 2 pcs.;
  • flour - 1-2 tbsp. l .;
  • oil - as needed;
  • green onions - a bunch;
  • paprika and nutmeg - 1/3 tsp;
  • salt to taste.

Sequencing:

  1. Grind the tubers on a grater. Insert the egg with flour, season to taste.
  2. Chop the onion and add to the total mass.
  3. Mix. Drain excess fluid.
  4. Fry potato pancakes in a pan on both sides.

You can additionally bake potato pancakes in the oven in pots or on a baking sheet in sour cream. As a layer, they add meat, mushrooms and various vegetables. Top all this must be sprinkled with grated cheese. Under the cheese "cap" they will grind and turn out to be very tender and soft.

Those who are worried about their figure, it is better not to fry potato pancakes, and bake. The baking sheet should be greased with oil and lay the blanks on it with a tablespoon. Cook in the oven for no more than a quarter of an hour, then turn the products over and bake for another 6-7 minutes.
