Now the soup of red, yellow and green lentils is prepared in many countries, and in some dishes is traditional. Classic Lentil Soup

Preparing a dish from:

  • yellow or red lentils - 300 g;
  • carrots - 2-4 root vegetables;
  • onion - 1 pc.;
  • garlic teeth - 5-6 pieces of a small size;
  • ground coriander - 0.5 tsp;
  • dry aromatic herbs - to taste;
  • pepper;
  • water or broth - 1 l;
  • salts;
  • olive oil.

Cut the onions into small cubes and send to fry in oil. Peel the carrots with garlic, chop in a blender and add to the onion. Next send coriander, salt, simmer without a lid over low heat.

Rinse lentils in 7 waters, add to vegetable frying. Pepper, sprinkle with spices. Pour in broth and cook for about 20 minutes. Serve with fresh herbs.

In Turkish

Turkish lentil soup has long been a favorite food in many countries. It is prepared without the use of beef or poultry, but it turns out to be very rich, nutritious and tasty.

To prepare the dish, you should stock up:

  • red lentils - 200 g;
  • potatoes - 2 pcs.;
  • carrots;
  • cherry tomatoes - 6 pcs. (can be replaced with tomato paste);
  • sweet pepper;
  • hot pepper;
  • onions;
  • lean fat - 80 ml;
  • vegetable broth - 1.2 l;
  • cloves - a pair of inflorescences;
  • paprika - 0.5 tsp;
  • lemon zest;
  • garlic - 3 cloves.

Carrots and potatoes are washed, peeled, cut into cubes. Bell pepper is chopped into strips, hot pepper in small squares. Lentils are washed, the tomato is blanched and chopped on a grater.

In oil in a deep saucepan, fry the onions and garlic, carrots, potatoes, other vegetables and lentils in turn. Add tomatoes, spices, pour the broth and cook until the potatoes are completely cooked. Kill at the end with a blender, garnish with lemon zest and serve.

Yellow Lentil Soup

For those who have tried lentil soup, peas are already irrelevant, requiring long soaking and cooking. The dish is saturated, satisfying, cooked in less than an hour.

To prepare it, you should stock up:

  • yellow lentils - 1 cup;
  • pork meat - 400 g;
  • water - 2 l;
  • onions;
  • carrots;
  • vegetable oil - for frying;
  • potatoes - 2 large tubers;
  • salt, black pepper;
  • dill;
  • garlic - 4 cloves.

The meat is boiled, divided into portions and put into strained broth. Yellow lentils are washed, potatoes and other vegetables are diced.   • lentils - 280 g;
  • canned tomatoes - 350 g;
  • onions;
  • garlic - 5-7 cloves;
  • carrots;
  • olive oil - 40 ml;
  • salt, ground pepper;
  • saffron;
  • rosemary, basil (optional).

First, lentils are boiled for 25 minutes until cooked. For soup according to this recipe, it is good to use two types of lentils - the color is the same, and the taste of the dish will turn out brighter. Chop the garlic and onion and fry in oil. Next add carrots, tomatoes, salt and spices. Put the stewed vegetables into the lentil broth, cook for about 8 minutes. Serve with lemon juice and mint, pre-chopped.

With smoked meats

To prepare it, you should stock up:

  • smoked pork ribs - 0.5 kg;
  • potatoes - 4 tubers;
  • lentils - 400 g;

  • pure liquid - 2.7 l;
  • salt pepper;
  • olives;
  • lemon;
  • greenery.

Fry onions, carrots, potatoes and lentils in a frying pan in oil. Pour boiling water over everything, add spices. Cook for 35 minutes until the potatoes are ready. At the end, add salt and spices, cut olives into rings and lemon. Serve decorated with greens.

In a slow cooker

In a slow cooker, cooking lentil soup will be quick and easy.

To prepare it, it is worth stocking up:

  • lentils, preferably red - 230 g;
  • potatoes - a couple of tubers;
  • carrots;
  • onions;
  • butter - 30 g;
  • water - 1.8 l;
  • dill greens - a couple of twigs;
  • with salt.

Cut the vegetables into small slices, grate the carrots. Fry the onions and carrots in oil in the "Frying" mode for 7 minutes, then add the potatoes. Then pour the washed lentils, add liquid, salt and turn on the “Soup” mode. Cook for 12 minutes, mix and continue cooking until the potatoes are ready. At the end add greens and favorite spices.
