The necessary equipment for making a drink is a moonshine and water trap. An alternative to the second will be a regular rubber glove.

As an additional inventory you will need a large basin and a pair of small bowls.

What grapes are best to make chacha

It is difficult to answer which grapes are best made from chacha. Georgians prefer an alcoholic drink strictly from white berries, and residents of Abkhazia pay attention to dark varieties.

 

The most important thing in choosing grapes is to take berries with high acidity. If you want a homemade drink to be slightly acidic, feel free to take the white Rkatsiteli. And if you want the chacha to be richer and deeper, then dark varieties, for example, Kacic, are ideal.

To diversify the recipes of chacha, several grape varieties are combined. Such a drink turns out to be very saturated, and most importantly, unique, because each family creates its own original version.

A simple recipe for chachi made from grape juice without yeast

Making a drink is not so difficult. It’s enough to know a simple recipe for chacha from grape juice without yeast.

Ingredients:

  • 8 kg of unwashed grapes;
  • 14 liters of water;
  • 4 kg of sugar.

Cooking:

  1. Put all the grapes in a basin. Remember the berry carefully so that there is not a single whole grape.
  2. Add sugar and 5 l of warmed water. The fluid temperature should be 30 degrees.
  3. Stir the mixture thoroughly to completely dissolve the sugar. It is preferable to do this with a wooden spoon.
  4. Pour the future alcoholic beverage into a narrow-necked jar, put on a glove as a water seal. Remember to make a small hole in it. The bank should be placed in a warm room. Every 2 days, remove the glove and mix the contents.
  5. The end of fermentation can be determined by the state of the water seal. If the glove is inflated, then the process is very active, and when it became soft again, this indicates that the fermentation is complete.
  6. After this, strain the contents through several layers of gauze.
  7. Pour strained drink into a cube of moonshine and start distillation.
  8. Stop the device when the alcohol strength drops to 20 degrees. Measure how much drink you got. At this stage, there should be 6 liters.
  9. Add water in an amount equal to the volume of the chachi, in our case it is 6 liters, and place it in the device again.
  10. After the device is finished, the drink is ready to drink.

Washing grapes is not recommended, since water will wash away the yeast that is on the peel of the berries, which means that the fermentation process will not start.

Technology for making a drink with sugar

If chacha seems too bitter for you, try making it sweeter. The technology for making a drink with sugar is quite simple.

 

Ingredients:

  • 35 liters of water;
  • 7 kg of sugar;
  • 30 g of wine yeast;
  • 10 kg of grapes.

Cooking:

  1. Take a large container and put the grapes there, squeeze it until juice forms.
  2. In a separate container, mix sugar and water. Pour 1 kg of granulated sugar onto 7 liters of liquid. Put the mixture on the fire and make a kind of water-sugar syrup. After cooking, let the mixture cool to 25 degrees and pour into the grapes.
  3. Pre-grind wine yeast and add it to the contents.
  4. Put the future alcoholic drink in the room for 10 days. Stir every day. Make sure that the chacha does not form bubbles.
  5. After 10 days, strain the mixture and fill in a distillation cube. You will have to drive 2 times, because after the first distillation the chacha still does not get rid of all the oils.
  6. After the second distillation, add water to the drink by volume of the resulting alcohol.

The alcoholic drink is ready to drink.

No added sugar

If you are a true connoisseur of Georgian alcoholic drinks, then chacha without sugar will definitely interest you.

Ingredients:

  • 10 kg of grapes.

Cooking:

  1. Put the grapes in a large bowl, crush it well, cover with gauze. Leave for 7 days. Mix by hand daily.
  2. Strain the grapes several times and send to the moonshine for double processing.
  3. After the last distillation, pour the chacha in bottles and leave for 3 weeks.
  4. After the specified time has passed, strain the drink again and pour it into the bottles again.

As you can see, chacha without sugar is prepared much easier than previous versions of the drink.

Chacha from grape meal at home

It is much easier and faster to make chacha from a meal because there is no need to squeeze juice from grapes.

 

Ingredients:

  • 30 liters of filtered water;
  • 15 kg of grape meal;
  • 7 kg of sugar.

Cooking:

  1. Put the cake in the container, cover it with gauze, leave for 7 days. Stir the mass daily with your hands or a wooden spoon.
  2. After a week, add heated water and sugar to the feedstock, mix thoroughly until the sand dissolves. Cover again with a cloth and let stand for 2 days.
  3. Strain the resulting mixture twice and fill in a distillation cube.
  4. Distill twice, after the second time pour the drink into bottles.

Chacha from grape meal at home is easy to prepare, so even an inexperienced person can make it.

Yeast

The recipe “Cooking with Yeast” is suitable for those who want to make chacha from grapes faster and better, as fermentation will accelerate with this product.

Ingredients:

  • 5 liters of homemade grape juice;
  • 3 kg of sugar;
  • 50 g dry yeast;
  • 15 liters of pure water.

Cooking:

  1. Dilute the yeast with water according to the instructions attached to it.
  2. Pour the grape juice into a large bowl, add sugar and diluted yeast.
  3. The whole mixture is poured with 15 liters of water. The liquid should be at room temperature, as hot spoils the yeast, causing them to die.
  4. Pour the contents into a large bottle, place a water lock and put the drink in a dark place at room temperature.
  5. Stir daily with a wooden spoon.
  6. After the glove settles, the fermentation process is completed. Strain the drink several times and place in the distillation apparatus.
  7. Distill twice and bottle.

Chacha is ready to eat.

From Isabella grape variety

Chacha from Isabella is common in Russia. In Georgia, alcohol is not prepared from this variety. Such a recipe for chachi from grapes can be safely called domestic.

 

Ingredients:

  • 5 l of water;
  • 2 kg of sugar;
  • Isabella grapes - 14 kg.

Cooking:

  1. Put the grapes in a large basin, remember it well, fill it with water and add sugar. Mix thoroughly until granulated sugar is dissolved, then pour into a large bottle.
  2. Install a water seal or rubber glove, place the container in a dark place for several weeks.
  3. At the end of the fermentation, strain the chacha several times and pour it into a distillation cube.
  4. In a moonshine still, distill the drink twice.
  5. Add water by volume of chacha and bottle.
