Classic thin pancake recipe

The simplest pancakes on water with eggs are made from a minimum of ingredients. Ready pancakes can be served with berry jam, honey, and condensed milk.

They are suitable for filling with various fillings.

  • chicken egg - 2 pcs.;
  • wheat flour, preferably of the highest grade - 1 tbsp .;
  • cold boiled water - 3 tbsp .;
  • granulated sugar - 1 tbsp. l .;
  • finely ground salt - 0.5 tsp;
  • refined oil - 2 tbsp. l

Advice! You should get a special pancake pan with low sides. Best of all, if the dishes are made of cast iron, such heavy pans more evenly distribute heat and pancakes bake well, without burning on the edges.

  1. Sift flour, pour in fine salt, mix.
  2. We break the eggs into a spacious dish, beat with a whisk, pour one glass of water and add sugar, mix until sugar grains dissolve.
  3. We begin to add flour, constantly stirring the mass. Stir thoroughly so that no flour lumps remain.
  4. Pour the remaining water into the resulting thick dough, knead.
  5. Add oil.
  6. Let the dough stand for 30-40 minutes, so that the gluten of the flour is well swollen.
  7. We heat the pan, coat the bottom with oil.
  8. We collect about half a ladle of dough, pour it into the center of the pan and, turning the dishes in a circle, distributing the dough along the bottom with a thin layer.
  9. We put on the stove, as soon as the lower part is browned, raise the pancake with a spatula and turn it with the side not fried side down. Bake for another 30 seconds, remove.
  10. Fold in a pile.

Option for fasting

Pancakes are served on the table and on fasting days, but when kneading, you will have to refuse eggs.

A recipe for lush yeast pancakes

If you prefer lush yeast pancakes, use this recipe. You can bake delicious pancakes on water using raw pressed yeast, but working with dry yeasts is more convenient.

To make thick pancakes you will need:

  • boiled warm water - 750 ml;
  • dry yeast - 1 packet (7 g);
  • egg - 1 pc.;
  • granulated sugar - 3-4 tbsp. l .;
  • flour - 500 g;
  • refined vegetable oil - 50 ml.

Procedure:

  1. Pour warm water into a bowl, put the yeast and half the indicated amount of sugar, mix well. When the yeast and sugar are completely dissolved, pour 2-3 tablespoons of flour and stir. Cover the bowl with a napkin and leave it warm for a quarter of an hour.
  2. Beat the egg with the remaining sugar.
  3. When the dough is covered with many bubbles, add beaten eggs and vegetable oil, mix.
  4. Sift the flour, add gradually to the dough, mix well with the liquid part. The mass should be a little thicker than kefir.
  5. We set it in the heat to rise for 30 minutes.
  6. We do not mix the dough anymore, carefully scoop it with a ladle and pour into a preheated pan.
  7. Bake until the lower part of the pancake is browned and the upper part dries.
  8. Gently turn over with a shovel and oven for about 30 seconds.
  9. We put the baked pancakes in a pile.

Cooking in a custard way

Custard thin pancakes on the water are lace, with many small holes.

  • chicken egg - 3 pcs.;
  • water - 500 ml;
  • granulated sugar - 3 tbsp. l .;
  • small salt - 0.5 tbsp. l .;
  • baking powder for dough - 1 tsp;
  • flour - 1.5 tbsp .;
  • refined oil - 3 tbsp. l

 

We start cooking:

  1. We break the eggs into the dishes, in which we will knead the dough, add salt and sugar, beat until the sugar grains are completely dissolved.
  2. Sift flour, mix with baking powder.
  3. Pour about ¾ cup of water into the egg mass, set the rest of the water to boil.
  4. Pour flour with baking powder into a bowl, stir until smooth.
  5. Continuing to interfere, pour cool boiling water into the dough in a thin stream.
  6. Add oil and knead.
  7. We bake pancakes using proven technology.

Oatmeal pancakes

Making pancake dough is possible not only from wheat flour.

As a basis, you can take oatmeal, it will turn out tasty and healthy.

  • Hercules flakes - 5 tbsp. l (we collect spoons with a slide);
  • cool boiling water - 100 ml;
  • egg - 1 pc.;
  • semolina - 1 tbsp. l .;
  • small salt - 0.5 tsp;
  • granulated sugar - 2 tbsp. l .;
  • refined oil - 2 tbsp. l

Procedure:

  1. We choose the most common oat flakes without additives, pour them into a bowl, pour boiling water and leave until completely cooled, the cereal will swell during this time. If you need to make a breakfast dish, then you should steam the cereal in the evening, and start baking in the morning.
  2. To the swollen flakes, add semolina and the egg, which was previously combined with salt and sugar, knead.
  3. Pour in the oil, leaving a little to grease the pan.
  4. Fry oatmeal pancakes, as usual. Lubricate the pan only before baking the first pancake.
