Kefir pancakes with boiling water come out very thin and crispy. They are wonderful combined with sour cream, yogurt, sweet syrups, various sauces, toppings and honey.

Classic kefir recipe with boiling water

Cooking pancakes does not take much time, and the result exceeds all expectations.

Ingredients:

  • kefir (2.5% fat) - 2 cups;
  • sifted flour of the highest grade - 0.5 kg;
  • boiling water - 1 cup (250 ml);
  • eggs (medium size) - 3 pcs.;
  • sugar - 3 tbsp. l with horseback;
  • salt - a pair of pinch;
  • soda - 1 tsp. without a hill;
  • butter (82% fat) - 60 g;
  • oil (refined deodorized) - 5 tbsp. l

It is advisable to get all the ingredients in advance from the refrigerator so that they are heated. So pancake dough mixes evenly.

Cooking method:

  1. Break the eggs into a large bowl with high edges, salt them, add sugar and beat with a hand mixer until smooth.
  2. Add kefir and mix well.
  3. In parts, introduce flour, constantly interfering so that no lumps form.
  4. Pour soda into boiling water.
  5. Pour slaked soda to the egg-flour mixture with a thin stream, not forgetting to stir at this moment.
  6. Allow the dough to infuse for 20 to 25 minutes on the table.
  7. After a while, add 4 tbsp. l vegetable oil and mix.
  8. Heat a frying pan with low sides on a stove. Grease the bottom with oil.
  9. Bake each pancake on both sides until golden brown. The less you pour the dough into the pan, the thinner the pancakes will be.
  10. Fold the finished products on a flat plate, and until they have cooled, grease with a piece of butter.

Thin pancakes with holes

Kefir custard pancakes look great: tiny holes make them look like golden lace.A thin dough just melts in your mouth, and if you add a filling of condensed milk or cottage cheese, the taste becomes even brighter.

Structure:

  • kefir (fat content not more than 3.2%) - 0.5 l;
  • large eggs - 2 pcs.;
  • premium flour - 2 cups;
  • sugar - 2 - 3 tbsp. l .;
  • water - 2 glasses;
  • salt and soda - a pinch;
  • deodorized vegetable oil - 2 tbsp. l + a little to grease the pan.

 

Cooking method:

  1. Kefir to send in a deep bowl with sugar, soda and salt.
  2. Drive eggs into it and pour in oil, mix.
  3. Sift the flour through a sieve and add in portions to the liquid ingredients. Stir well until smooth. The dough should turn out as thick as a pancake.
  4. Boil water and pour in a thin stream into the dough, stirring all the time.
  5. Allow the mixture to cool slightly for 20 to 30 minutes, but no more.
  6. Grease a pancake pan with oil and put on the middle burner.
  7. Scoop a little dough with a ladle and pour it into a preheated pan. Rotating the dishes allow the liquid to flow, forming a beautiful even circle.
  8. Bake pancakes for 40-60 seconds on each side over medium heat.

Openwork pancakes on kefir with boiling water are quickly fried and well behind the pan, not tearing and not sticking.

How to do without eggs

If there are no eggs at hand, you can cook very tender and airy pancakes without them.

Ingredients Composition:

  • kefir of any fat content - 400 ml;
  • flour (sifted) - 250 g;
  • boiling water - 200 ml;
  • oil without taste and odor - 2 tbsp. l .;
  • salt - 0.5 tsp;
  • soda - 0.5 tsp;
  • sugar - 1.5 tbsp. l without top.

Cooking method:

  1. Kefir mixed with soda and wait a couple of minutes. Then add salt and sugar.
  2. Pour flour into portions and stir so that there are no lumps left.
  3. Pour boiling water slowly, stirring slightly for brewing.
  4. At the end, add oil and mix.
  5. Start cooking pancakes in a preheated pan greased with a drop of oil.
    It is advisable that the bottom be non-stick. Then the pancakes will be easier to fall behind.
  6. Pour a little dough and turning the pan to distribute it on the surface.
  7. Wait a bit until the edges are baked, then pry off the pancake with a spatula and turn it over.
  8. Bake for about 30 seconds, then transfer to a flat plate and cover.
  9. Do the same with the remaining test.
  10. Ready-made pancakes can immediately be served to the table or stuffed with any filling.

Dietary cooking option

These pancakes have far fewer calories, although their taste cannot be distinguished from the classic ones.

Structure:

  • kefir (fat content 0.5%) - 500 ml;
  • flour - 8 tbsp. l .;
  • raw egg white - 1 pc.;
  • soda - 1 tsp;
  • salt - 0.5 tsp;
  • sugar - 1 - 2 tsp;
  • citric acid - 0.5 tsp;
  • hot water - 150 ml;
  • vegetable oil - 2 tbsp. l

 

Cooking method:

  1. Beat the protein with a pinch of salt and sugar until light foam.
  2. Add kefir and beat again.
  3. Pour in water, stirring the dough to make it homogeneous.
  4. Pour citric acid, soda and flour (in parts). It’s good to beat everything so that the mass does not come in clumps.
  5. When the dough begins to bubble, add oil and start baking pancakes.
  6. Grease a heated frying pan with oil and pour a little pancake mixture. Wait for the edges to brown and turn to the second side. When the pancake is baked, put it on a plate. According to this scheme, bake the remaining pancakes.

Openwork pancakes without soda

You can cook thin pancakes that look like lace without soda. Taste and appearance will not be affected.

Ingredients Composition:

  • milk (fat content 1 - 2.5%) - 150 ml;
  • boiling water - 100 ml;
  • kefir (fat content of 2.5% and below) - 400 ml;
  • premium flour - 300 g;
  • egg yolks - 3 pcs.;
  • salt - 2 pinches;
  • vegetable oil - 60 ml.

Cooking method:

  1. All components are preferably heated to room temperature or higher.
  2. Grind the yolks with salt and sugar, then add boiling water, warm kefir in parts and beat well with a mixer or whisk.
  3. Continuing to beat, add flour in small portions.
  4. Add milk (in a trickle) and sunflower oil.
  5. Allow the dough to infuse in a warm place for 30 to 40 minutes.
  6. Grease a frying pan with oil and heat.
  7. Scoop the dough with a ladle, but pour a little so that it barely covers the bottom.
  8. Bake each pancake until golden brown on both sides.

Pancakes can be served as an independent dish, pre-greased with butter, or wrapped inside a sweet filling. In both cases, the treat will be excellent.
