Cooking process:

  1. In the bowl we release the eggs, add salt, add sugar, and beat until smooth with a mixer. Pour kefir.
  2. Pre-sift flour for pancake dough to enrich its air. Mix the sifted flour with the egg substance so that there are no lumps left. For convenience, we use a mixer or a hand blender at low speeds.
  3. We boil water, pour a glass, and pour soda into it.
  4. Pour a soda solution into a dough in a neat trickle, and be sure to mix it until smooth.
  5. Leave for 20 minutes, until the mass becomes elastic. Then pour oil into the mixture, mix well again.
  6. We fry pancakes in a well-heated pan, slightly lubricating its surface at first with lean (maybe creamy) butter.
  7. Scoop the dough with a ladle, and, turning the pan in a circle, distribute it on the frying surface.
  8. The thinner the layer of dough is poured, the tastier and more airy the pancake will turn out, and the more small neat holes are formed on its surface.
  9. As soon as we notice that the edges are fried, exfoliated and raised, and the holes are browned on the pancake, you can turn it over to the second side.
  10. As soon as rosy spots of different diameters appear on the reverse side, the pancake is removed, folded into a stack, and greased with butter.

Serve with thick confiture, condensed milk or classic with sour cream.

Thin pancakes with kefir and boiling water are also prepared without the addition of soda.

For cooking you need:

  • a glass of low-fat milk;
  • kefir 2.5% - 400 ml;
  • premium flour - 300 g;
  • granulated sugar - 2 tbsp. l .;
  • a pinch of salt;
  • egg yolks - 3 pcs.;
  • vegetable oil - 4 tbsp. l

Step by step cooking:

  1. Warm kefir is combined with salt, sugar and yolks.
  2. Beat the mass with a whisk, pouring flour in small portions.
  3. We warm the milk to a warm state, and pour a thin stream into the dough.
  4. Pour the oil last, and leave the dough alone for 30 minutes.

In appearance, the pancakes come out beautiful and ruddy, with small holes.

Tender creamy clamshells contain cottage cheese.

Ingredients:

  • a glass of 2.5% kefir;
  • refined oil - 80 ml;
  • a pinch of fine salt;
  • not a full glass of boiling water;
  • fat cottage cheese - 100 g;
  • sugar - 40 g.

 

Step-by-step cooking process:

  1. Grate the curd in a bowl where the dough will be. Put salt, soda and ½ volume of sugar in it. We mix everything, and add kefir to the composition.
  2. We release a couple of eggs and the rest of the sugar into the mass. Beat the dough at low mixer speeds.
  3. Gradually introduce high-quality flour, and bring to a state of thick sour cream.
  4. At this moment, pour a thin stream of boiling water, continuing to whisk.
  5. Add the refined oil to the batter, and mix.
  6. Fry in a thin pancake pan greased with oil until the sides are rosy.

Turn off the finished lace pancakes with rolls, and pour with honey.

Fast baking in a bottle

Pancakes in a bottle are good in that you can create wicker lace of any complexity and present it on a plate with a sprig of mint and caramel. In addition, cooking is so much facilitated by the absence of dirty dishes that even a novice cook can handle it.

Ingredients:

  • a glass of fresh kefir with a fat content of 3.2%;
  • filtered water - ½ cup;
  • egg;
  • vegetable oil - 1 tbsp. l .;
  • a pinch of salt and soda;
  • a glass of pancake flour.

 

Cooking:

  1. We take a clean plastic bottle with a volume of 1.5 liters. Insert a funnel, or a sheet of parchment folded in a cone, into the neck.
  2. Pour kefir, introduce the egg, and pour the oil.
  3. It is necessary that kefir is not cold, so it must be left in advance at room temperature or heated in a water bath.
  4. Dry the funnel and add salt with sugar and sifted flour to the bottle.
  5. We twist the cap as best as possible, and actively shake the contents of the bottle for about 3 minutes.
  6. In half a glass of warm water, dissolve ½ tsp. soda, and this solution is also poured into a bottle.
  7. Bake in any desired shape in a greased frying pan for 1 minute on each side.

Thin pancakes with holes on kefir

Custard pancakes on kefir look spectacular, and their thin dough literally melts in your mouth.

Elements of the composition:

  • kefir with 3.2% fat - 500 ml;
  • sugar - 2 tbsp. l .;
  • a pair of eggs;
  • flour of the highest quality - 2 cups;
  • a pinch of soda and salt;
  • boiling water - 2 glasses.

Steps for making rosy baking with holes:

  1. Pour kefir into a container, pour sugar with salt and soda there.
  2. Next, we introduce eggs and vegetable oil. Mix lightly and add the flour in portions, also continuing the kneading process. The consistency of the dough will turn out as thick as a pancake.
  3. Pour boiling water with a thin stream so that the dough becomes liquid (pancake).
  4. We leave the dough for 15-20 minutes, so that it "rests", and kefir has extinguished soda.
  5. Pour pancake on the hot surface of the pan, greased with oil, and turn from side to side so that the dough covers the entire surface of the pan.
  6. We fry for a minute from two sides to beautiful goldenness.

The finest lacy pancakes are quickly fried, and well removed from the pan. Baking can be served as an independent delicacy, offering it jams, creams and honey in the outlet. And if you start pancakes with soft cheese, mushrooms or slices of salmon, then they turn into a real restaurant dish.
