Openwork pancakes on kefir - an incredibly light and airy dish, while very hearty. Depending on the method of preparation, magnificent or very thin pancakes are obtained. They can pamper themselves even on a diet, if you select low-calorie ingredients.

Classic recipe for kefir

This method of cooking is known to many, but it also has its own tricks.

Ingredients:

  • kefir - 500 ml;
  • wheat flour - 250 g;
  • egg - 2 pcs.;
  • granulated sugar - 1.5 tbsp. l .;
  • salt - 0.5 tsp;
  • soda - 0.5 tsp.

Cooking method:

  1. Mix eggs, salt and sugar in a bowl with a fork or whisk. You can use a mixer or blender.
  2. Kefir is heated so that it becomes a little warm. Add soda. This is necessary in order to better pass the chemical reaction, due to which the pancakes are openwork.
  3. Kefir is mixed with beaten eggs.

Ingredients:

  • kefir - 500 ml;
  • wheat flour - 200 g;
  • egg - 3 pcs.;
  • butter - 2 tbsp. l .;
  • granulated sugar - 2 tbsp. l .;
  • salt - 0.5 tsp.

Cooking method:

  1. Separate the egg yolks from the proteins and grind them with butter and sugar.We leave the proteins, they will come in handy.
  2. We mix warm kefir with flour and pour into yolks, grated with butter.
  3. Mix the dough thoroughly until completely homogeneous.
  4. In a separate bowl, beat the egg whites with salt until foam appears. This will make lace pancakes without the use of soda.
  5. Add proteins to the dough and mix thoroughly.
  6. Fry in a hot pan without vegetable oil. So that the edges do not burn, they should immediately be separated from the walls.

From boiled custard dough

Pancakes with kefir and boiling water will require a little more effort, but the result will definitely please. The dough will turn out very tender with lots of holes.

  • flour - 500 g;
  • egg - 3 pcs.;
  • granulated sugar - 2 tbsp. l .;
  • salt - 0.5 tsp;
  • soda - 0.5 tsp;
  • boiling water - 250 ml.

Cooking method:

  1. Add salt and granulated sugar to the eggs, mix everything into a homogeneous mass.
  2. Pour warm kefir into the mixture and add flour. It is necessary to achieve the density of the dough for fritters. In order not to make a mistake, it is recommended to apply flour in small portions, and each time mix until smooth.
  3. Add soda to the freshly boiled water. Pour boiling water into the dough in a thin stream, constantly stirring.
  4. We leave the dough for half an hour in a sealed container to make custard pancakes on kefir.

Dietary cooking option

A very simple recipe for those who count calories. The taste is practically not inferior to classic pancakes, and there is much more benefit in it.

  • salt - 0.5 tsp;
  • soda - 0.5 tsp.

On mineral water and kefir

  • mineral water with gas - 250 ml;

  2. Mix the eggs with granulated sugar. Salt may not be needed, since the mineral water has a salty taste.
