  • homemade cheese or “Adygea” - 200 g;
  • green onion - 1 bunch;
  • parsley, cilantro - to taste;
  • salt - a pinch;
  • butter (any fat content) for greasing the finished cakes.

Procedure:

  1. Put salt in the flour and pour in a thin stream of milk at room temperature. Knead uncooked dough and set aside for 30 minutes.
  2. We wash the greens and onions. Finely chop and mix.
  3. Grate the cheese and combine with herbs and salt.

  5. Carefully, so as not to tear, roll to a thickness of 3-4 mm.

With meat

In the classic version for meat miracles take lamb. However, Dagestan cakes with any meat - it is unrealistically delicious!

Any mincemeat, but preferably not mixed, is suitable for the dish.

Products:

For the test:

  • flour - 700 g;
  • eggs - 1 pc.;
  • water - 200 g;
  • salt is a pinch.

For filling:

  • minced meat - 0.6 kg;
  • meat broth - half a glass;
  • apple cider vinegar 6% - 1 tbsp. l .;
  • Caucasian spices to taste.

Procedure:

  1. Mix the eggs with salt and add to the flour. Pour in water, but not completely. It is necessary to make the dough like ravioli.
  2. Set the dough aside and get to the filling.
  3. Add the broth, vinegar and spices to the minced meat, mix everything.
  4. Separate a piece from the dough and roll it out with a height of 5-7 mm.
  5. We put the minced meat on one half, cover the second with the top and pinch it.

Cooking with Potatoes and Onions

The miracle with vegetables is suitable for those who do not eat meat, for example, in fasting.

Products for the test:

  • flour - 700 g;
  • kefir (fat content 3.2%) - 500 g;
  • salt (small) - 1 tsp;
  • soda - on the tip of a knife.

For filling:

  • potatoes - 800 g;
  • butter from cream (no spread) - 50 g;
  • onions - 1 pc.

Onions can be replaced with a green feather. Feathers should be thin medium length (10-12 cm) feathers of bright green color. Such a look only happens in a young, recently chopped onion, which does not have unpleasant bitterness and does not spoil the dish.

Cooking method:

  1. In a fermented milk product we “extinguish” soda. Add salt and mix well.
  2. Pour the flour, make the dough and put it in a cold place for 40 minutes.
  3. Boil potatoes, knead, add oil and salt. Mix everything to make mashed potatoes.
  4. Finely chop the onion head and fry in butter, add to the potatoes. Green onions just chop and pour in mashed potatoes.
  5. We take out the dough from the refrigerator and divide it into 10-12 equal pieces.
  6. We take the ball and make a cake out of it using a rolling pin. On it we lay out the filling of the same volume as the ball.
  7. Take the next part of the dough and roll the cake. We cover the filling with it from above and fix the edges of the lower and upper parts of the miracle between each other.
  8. Fry the cake in a pan, 2 minutes on each side.
  9. We grease hot products with oil and serve to the table.

Cooking recipe with cottage cheese

It is believed that it was from the Avar cuisine that such an unusual combination as cottage cheese with greens came.

Products for the test:

  • for such cakes, you can take pancake flour - 1 kg;
  • warm water - 300 g.

For filling:

  • cottage cheese with a fat content of 9% - half a kilo;
  • a pack of sour cream - 200-250 g;
  • one egg;
  • a bunch of green onions;
  • pepper salt - to taste.

Procedure:

  1. Pour lightly salted water into the flour and cook the dough. Set aside for half an hour.
  2. Mix cottage cheese with egg and spices. Add sour cream and onion, mix until smooth.
  3. We divide the dough into identical lumps. We take one and make a cake.

  5. Fry the miracle in a pan, you can use ghee.

Miracle with cheese and ham
